Wildly Different Waffles

Our signature waffles are naturally fermented for over 24 hours using traditional sourdough techniques.

The long fermentation naturally breaks down gluten proteins and phytic acid, making nutrients more accessible and creating waffles that many people find easier to digest.

The result is a waffle that's crispy on the outside, light and airy on the inside, made with simple ingredients and the patience that only time can provide.

No shortcuts.
No artificial flavors.
Just real ingredients, time, and a little wild fermentation.

What began as a passion project between Gaby Montiel and Miguel LaCruz grew from a small stand at the Hastings Farmers Market into a beloved neighborhood café tucked away in a little back alley. Along the way, Wild Culture became more than a waffle shop—it became a place where people gathered, celebrated, and created memories over naturally fermented sourdough waffles.

While our café has now closed, Wild Culture is far from over.

Today, we're focused on bringing our signature sourdough waffles to more homes through our frozen collection, so you can enjoy the same handcrafted waffles whenever you want.

You can now find Wild Culture frozen waffles at Hastings Foodtown and Pioneer Market, with more locations coming soon.

Our Philosophy

At Wild Culture, we've never believed you should have to choose between healthy and delicious.

We believe great food should surprise you, nourish you, and bring people together.

Whether we're serving waffles across a café counter or from your own freezer at home, our mission remains the same:

To make naturally fermented food that sparks joy, celebrates creativity, and reminds us that the best things in life are worth waiting for.
